Summer Fruit Trifle


Sponge fingers
Medium Dry Sherry
1 pound of Summer fruit, fresh or frozen ( Strawberries, Currants, Raspberries, Brambles, Cherries etc....)
2 heaped tsp of Arrow Root
100ml water
2 tbsp of sugar to tast

Arrow root
1/2 Jar of Strawberry Jam
A few
fresh Strawberries, Blueberries, Raspberries......
Custard
Double cream whipped
Roasted Almond Flakes
Grated dark Chocolate

  1. simmer the fruit in the water and sugar for a few minutes
    until soft
  2. mix the arrow root with some cold water
  3. add to the fruit, mix well in and bring back to boil
  4. turn off heat keeping stirring for a while
  5. leave to cool
  6. line the bottom of glass dish with the sponge finger
  7. soak them with Sherry
  8. gently heat the Strawberry Jam with 1 tbsp of water
  9. pour through a sieve over the sponge cake
  10. pour over the Custard and leave to set
  11. add the fresh Summer fruit
  12. put the fruit mixture on top  and leave to set
  13. cover with the whipped cream
  14. sprinkle over some roasted Almond flakes or Strawberries and grated Chocolate
  15. Delicious
