Tri Colore
 

Tri Colore represents the three colors of the Italian flag, where this dish originally comes from. It makes a nice Starter or a light Lunch on a hot summers day. Easy to prepare and no cooking involved.
Suitable for Vegetarians 

1/2 avocado per person
1 tomato per person
3-4 slices of mozzarella (Italian)
some fresh basil leaves
2 tbsp. olive oil
1 tbsp. white wine vinegar
salt and freshly ground pepper to taste

  1. Cut in halve a ripe avocado, peel and slice,

  2. slice the tomato, the mozzarella and arrange everything on a plate with the basil

  3. mix the olive oil , vinegar, salt and pepper and pour over and serve.
    Delicious with crusty bread.
