Italian Tomato Sauce
 

This one of my favorite tomato sauces and the simplest to make. You can prepare it either with good quality tinned tomatoes (preferable italian ), or when in season fresh ripe tomatoes. It taste good  with all  kinds of pasta and gnocchi. 
Suitable for vegetarians.

800g-900g  (approx.2 lb ) good quality ( preferable italian ) tin tomatoes or 1350g (2-3lb) fresh tomatoes, peeled
1 large onion, peeled and cut in half
2 -3 cloves of garlic, peeled and left whole
2 oz( 55g) unsalted butter
or 4 -5 tablespoons virgin olive oil
or half of each 
salt and freshly ground pepper
freshly grated parmesan cheese
optional: fresh basil leaves, never dried

  1. put the tinned tomatoes into a saucepan and chop them small
  2. add the onion and garlic cloves ,salt and pepper. If basil is used, add half of it now and the rest for the last 5 minutes.
  3. let it simmer gently uncovered for 50 minutes, making sure is does not boil
  4. discard the onion and garlic
  5. now add the butter or the olive oil and stir it into the hot sauce, let it simmer for another 5 minutes
  6. check seasoning ,if you do not like the pips now is the time to put it through a sieve
  7. serve it with your favorite pasta and freshly grated parmesan cheese .
