Tart Tatin

A very easy to prepare upside down pie from France.
Tastes absolutely delicious.

12 oz ( 340g ) frozen puff pastry
6  apples, preferable granny smith, peeled, halved and cored
4 oz ( 110 g ) unsalted butter
4 oz  ( 110 g ) caster sugar
you need a frying pan 10 in ( 25 cm ) with heatproof handle

preheat oven : 200c ( 400 F - gas 6 )

  1. put butter into pan on very gentle heat and let it melt

  2. add the sugar and stir continuously until it just starts to turn darker

  3. place the apple halves, round side down
roll out the chilled pastry,  place over the apples and tuck it between pan and apples

  4. put pan into preheated oven and bake for 25 minutes

  5. remove from oven, place a plate over the pan and turn quickly around, being careful not to burn yourself.

  6. serve hot or warm with cream or vanilla ice cream, delicious.
