Split Pea and Ham Soup
 

some leftover cubed cooked ham
1 lb ( 450 g ) dried split peas
1 large onion, chopped
2 carrots, cubed
2 stalks of celery, thick sliced
2 bay leaves
stock
salt and pepper
some chopped parsley

  1. wash the peas and soak in water over night
  2. gently fry the onion
  3. add the carrots and celery
  4. add the drained peas, bay leaves and stock
  5. bring to the boil then leave to simmer for 1 hour
  6. add the cubes of ham and simmer for 1/2 hour more
  7. season to your liking and garnish with chopped parsley
