some
leftover cubed cooked ham
1 lb ( 450 g ) dried split peas
1 large onion, chopped
2 carrots, cubed
2 stalks of celery, thick sliced
2 bay leaves
stock
salt and pepper
some chopped parsley
- wash
the peas and soak in water over night
-
gently fry the onion
-
add the carrots and celery
-
add the drained peas, bay leaves and stock
-
bring to the boil then leave to simmer for 1 hour
-
add the cubes of ham and simmer for 1/2 hour more
-
season to your liking and garnish with chopped parsley
