Smoked Haddock Chowder
A tasty soup from the USA. Can prepared it with all different kind of fish.
  
16 oz ( 450 g ) smoked haddock  (undyed ), skin and bones  removed and cut into large chunks
1 large onion, peeled and finely chopped
1 celery stalk, very finely chopped
1 medium carrot, peeled and very finely chopped
4 small to medium potatoes, peeled and cubed 
1 tin 14 oz - of chopped tomatoes
1 clove of garlic, peeled and crushed
1 tablespoon of finely chopped parsley stalks
lemon juice of 1/2 lemon
stock ( chicken, fish or vegetable )
1 oz ( 30 g ) unsalted butter
salt and freshly ground pepper to taste
chopped parsley to garnish
  1. gently fry the onion in the butter until glazed in a large pan
  2. add the celery, carrots and garlic, cook for 4 - 5 minutes stirring all the time
  3. add stock, tomatoes and parsley stalks, bring back to boil
  4. now add the potatoes and simmer for 15 - 20 minutes in covered pan
  5. put in the lemon juice and fish, cook gently until fish flakes easily, 3 - 5 minutes
  6. serve with chopped parsley and crusty bread, delicious.
