A very tasty salad from France. Makes a nice Lunch or First Course. Ideal for
Summer Parties, easy to prepare.
1 lb [ 450 g ] new potatoes
1 lb [ 450g ] french beans
2-3 tomatoes
mixture of a few salad leaves
4-5 spring onions
hard boiled eggs, 1 per person, halved
tin of chunks of tuna
4-5 anchovies
1clove of garlic
10 black olives
Dressing: mix 2 to 1 olive oil and wine vinegar,
salt and pepper to taste
Boil the potatoes in their skins, drain and let cool, quartered
top and tail beans and boil for 10 minutes, drain and put into cold water
and drain again
rub the salad bowl with garlic, place the potatoes into the bowl and
add spring onions, halve of the dressing and mix well,
leave to stand a few minutes for the potatoes to absorb the dressing
then mix in some lettuce, beans, olives, anchovies
add the chunks of tuna, tomatoes and egg halves
pour over the last of the dressing and serve
