Risotto con Piselli

A real Italian dish, which is very tasty.
Suitable for vegetarian. 

1 lb ( 450 g ) arborio rice, italian risotto rice
8 oz (225g ) of fresh shelled or frozen peas, partially cooked
1 large onion, peeled and finely chopped
2 pints (1150 ml ) of  hot stock ( chicken or vegetable )
1/4 pint ( 150 ml ) of white wine
2 oz ( 55 g ) of unsalted butter
salt and freshly ground pepper 
freshly grated parmesan cheese

  1. gently fry the onion in the butter, careful  not to burn butter or onions

  2. add the rice, stir and gently add the white wine, a bit hot stock stirring all the time as the rice absorbs the liquid

  3. add the rest of the stock, the peas,  the seasoning and let it simmer gently for 20 - 30 minutes, stirring all the time

  4. serve with freshly grated parmesan cheese and a side salad, delicious.
