Potato Salad
 

2 pounds of firm potatoes
1 gherkin, finely chopped
1 onion, finely chopped
1 stalk of celery, finely chopped
1 apple, peeled and finely chopped
1 tablespoon of wine vinegar
enough low fat mayonnaise to cover 
all the potatoes when mixed
salt and pepper to taste

chopped parsley or chives for decoration

  1. Boil potatoes in their skin

  2. leave to cool

  3. peel and cut into bite size pieces

  4. season with salt and pepper

  5. add the rest of the ingredients 

  6. mix all together and leave , the bowl covered with clingfilm, for a 1-2 hours

  7. just before serving mix again and sprinkle with chopped parsley or chives
