Italian Roast Chicken with garlic and rosemary
There is nothing like a good roast once a week. It goes a long way and brings the family all together. We have tried to subsidies it with  other dishes on a Sunday, but felt by Monday something was missing.  If possible try buying an organic free range chicken.

1 large chicken
5 coves of garlic, peeled and cut in halve
sprigs of rosemary
1 tablespoon of olive oil
salt and pepper
preheat oven - minutes 

  1. wash chicken and pat dry 
  2. rub all over with garlic ,olive oil and salt and pepper
    rub garlic and salt inside the chicken then place the garlic cloves and rosemary sprigs inside
  3. cook fiercely for the first 20 minutes, then turn the chicken on its breast and turn temperature down,  turn chicken every 15 minutes until cooked,
    1 hour -1 hour and half   depending on size
  4. place onto a warmed serving dish, cover with foil and let rest for 10 minutes
  5. it goes well with roast potatoes, creamed potatoes or rice, and your favorite vegetables
