gooseberry crumble
 

Use the small gooseberries for this dish. If you grow them in your garden and have surplus, so much the better. Easy to prepare.

1 lb gooseberries, top and tailed and washed
2 tbsp sugar

for the crumble:
8 oz ( 220g ) plain, sifted flour
6 oz ( 170g ) unsalted butter
4 oz ( 110g ) caster sugar
1 pinch of salt

  1. sift the flour with the salt into a bowl
  2. add the cold butter and rub into the flour, until it looks like breadcrumbs
  3. add the sugar and mix together
  4. place the gooseberries and sugar into a greased ovenproof dish and cover it completely with the crumble mixture
  5. place in a preheated oven ( 200c /400F )for 30-35 minutes until golden brown
  6. serve hot with vanilla ice cream, delicious.
