Chicken Cacciatora
 

This tasty and easy to prepare dish from Italy, means 
Hunter's style chicken. Serves 4 people.

1 large chicken, cut into 8 portions, 
or 4 separate chicken pieces
1 large onion, chopped
1 stick of celery, sliced
1 carrot, sliced
2 bell peppers
2-3 cloves of garlic, crushed
1 tin ( 400g - 14oz ) of chopped tomatoes 
or same amount fresh tomatoes
1 large glass of dry white wine
1 large tablespoon of olive oil
1 level tablespoon or less of all-purpose flour
a few basil leaves, torn small 

  1. fry the chicken pieces brown on all sides in the olive oil in a shallow pan
  2. remove from pan and put aside
  3. fry the onion gently until light brown
  4. add the carrot, celery and garlic
  5. add the bell pepper and fry for a 1-2 minutes
  6. pour over the wine and stir
  7. add the tomatoes, basil and salt and pepper
  8. now return the chicken pieces, first the thighs and legs
    cover and simmer for 5 minutes
  9. then add the breast and wings
  10. cover and simmer gently for 35 minutes
  11. stir in the flour to thicken sauce and simmer for at least 1 minute, stirring all the time to prevent from sticking
  12. can be served either with rice or short pasta
