Boiled Bacon and Cabbage
 

a 2 1/2 lb joint of Bacon or Gammon, smoked or unsmoked
1 whole green cabbage
4-6 Peppercorns

  1. place the joint in a pot, cover with cold water with the peppercorns and bring to the boil

  2. remove the scum that floats to the surface

  3. cover and simmer for 1 1/2 hours (or 30 minutes per pound)

  4. cut cabbage into quarters and add to pot

  5. cook gently for about 1/2 hour, or until cabbage is cooked to your liking. (Test constantly: don't overdo it!) 

  6. drain, and serve with potatoes boiled in their jackets, and mustard or a sharp sauce -- mustard or (if you can get it) HP sauce, delicious.
