Tuna and Bean Salad
  Makes 4 portions.

2 tins of good quality tuna in Olive Oil
2 tins of Cannelini Beans
1sweet onion, thinly sliced
black olives, optional
a few lettuce leaves
1 tomato sliced
Dressing:
Olive Oil
Red wine
vinegar
sea salt
freshly ground pepper to taste
  1. drain the tuna
  2. drain the beans in a colander and rinse under running water
  3. mix the tuna, beans and onion slices together
    arrange on top of the lettuce and the sliced tomato
  4. mix the oil - vinegar 3 -1
  5. pour over the dressing and serve
