Mostarda

 

Mostarda, this delicious condiment from Northern Italy,  mainly eaten with white or boiled meat and Ham, is easy to prepare.
Mostarda can also be served with cheese and Crackers after Dinner. Delicious!

12 ounces (300 g) pears
6 ounces (150 g) cherries
8 ounces (200 g) apricots
10 ounces (250 g) figs
8 ounces (200 g) peaches
3  cups (800 g) sugar or 3 cups of honey
3-4 tbsp mustard powder
2 cups white wine vinegar

  1. wash the all the fruit
  2. peel, core and quarter the pears
  3. remove stones from fruit
  4. halve the apricots and quarter the peaches
  5. heat about a quart of water in a large pot, and when it begins to simmer slowly stir in the sugar or honey
  6. when it has all melted add the pears
  7. add peaches, apricots, cherries and figs, at five minute intervals 
  8. simmer all together for 10 minutes
  9. leave to cool.
  10. heat the vinegar and the mustard
  11. leave to cool.
  12. remove the fruit from the syrup to sterile jars 
  13. mix the syrup and the vinegar mixture
  14. pour over the fruit and seal the jars
  15. store in a cool dry place

Ideally eaten with with Turkey or white meat, cooked Ham and also with cheese after a meal.
