A very special
Christmas
treat for your
Mince Pies.
Mincemeat is very easy to prepare.
2 Granny Smith apples,
peeled, cored and diced
1/2 cup chopped candied orange and lemon peel 1/2 cup of
vegetable suet
2 cups of raisons
2 cups of
sultanas 1 cup of
currants
1/2 cup of dried chopped figs 1 cup of
brown sugar 1
freshly grated rind of an orange ( untreated or organic ) 1
freshly grated rind of a lemon ( untreated or organic ) 1
cup of
chopped almonds 1/4 tsp of
allspice 1/2 tsp of
cinnamon
a pinch of ground ginger a pinch of grated
nutmeg
4fl oz ( 120ml ) of Whiskey or Cognac 4 tbsp of
Rum
-
place all the
ingredients into a large bowl mix it all well together

mix the Whiskey or
Cognac and Rum together
-
fill the fruit mixture
into sterilised jars
-
pour the liquid
over it and store in a cool and dark place until needed, turning
them upside from time to time to mix in the liquid
