Meat Loaf

 

500 g ( 18oz ) minced ( ground ) beef 
or 300 g beef and 200g minced pork
2 small rolls, soaked in water
1 large onion, finely grated
1-2 cloves of garlic, crushed or very finely chopped
1 tablespoon of mustard
1-2 fillets of anchovies, very finely chopped ( optional )
Salt and freshly ground pepper to taste
1 large egg
some flour
sunflower oil
some stock 

  1. squeeze the water out of the rolls 
  2. mix it with the meat, onion, garlic, mustard, egg and the anchovies all together
  3. season with care, anchovies are very salty
  4. form into an oval 
  5. dust with flour
  6. gently fry on all sides in the hot oil until brown
  7. drain off the fat 
  8. add a little stock, about 2-3cm ( 1inch )and cover with lid
  9. leave to braise gently for 1 hour plus, basting with the stock from time to time.
  10. season to taste and thicken the stock to make gravy
  11. Serve with new boiled potatoes and your favorite vegetables.
