A
very hearty, easy to prepare soup from Germany.
Will make 4 portions.
2 pounds ( 900g ) potatoes, peeled and cubed
1 large onion, peeled and finely chopped
2 leek, finely sliced
1 stalk of celery, chopped
1 tablespoon of oil
2 - 3 pints of chicken or vegetable stock
salt and pepper to taste
fresh parsley, chopped
8 Pork or Turkey Frankfurters
- gently
fry the onion in the oil
- add
the leeks and celery and fry until lightly golden brown
- pour
over the stock bring to boil
- add
the potatoes, season with salt and pepper
- let
it simmer gently for 25 minutes
- blend
it smooth and add the Frankfurters
- leave
in for 10 minutes without cooking to prevent the sausages from
splitting
- serve
and garnish with chopped parsley
