Kartoffelsuppe, Potato Soup with Frankfurters
 

A very hearty, easy to prepare soup from Germany.
Will make 4 portions.

2 pounds ( 900g ) potatoes, peeled and cubed
1  large onion, peeled and finely chopped
2 leek, finely sliced 
1 stalk of celery, chopped
1 tablespoon of oil
2 - 3 pints of chicken or vegetable stock
salt and pepper to taste
fresh parsley, chopped
8 Pork or Turkey Frankfurters

  1. gently fry the onion in the oil
  2. add the leeks and celery and fry until lightly golden brown
  3. pour over the stock bring to boil
  4. add the potatoes, season with salt and pepper
  5. let it simmer gently for 25 minutes
  6. blend it smooth and add the Frankfurters
  7. leave in for 10 minutes without cooking to prevent the sausages from splitting 
  8. serve and garnish with chopped parsley
