A very special
Christmas
treat.
Bake well in advance to improve it's flavour, as it will keep for a few weeks. Wrap in foil or store in an airtight container and keep in a cool place.
50g (2oz) finely grated carrot
100g plain flour, sifted
120g (5oz) ground Almonds
75g
( 3oz)
powder sugar, sifted
25g ( 1oz) cold unsalted butter cut into cubes
1 tbsp freshly grated orange peel (organic)
1 egg yolk
pinch of salt
- rub the butter into the flour,
sugar, salt and ground Almonds
- add the egg yolk, grated orange peel
and grated carrots
- knead well in and wrap into cling
film
- place into refrigerator for 1
hour
- roll out and cut star shapes and
place on a greased baking tray
- bake in a preheated oven at 200C (
400F/Gas6 ) for 10-12 minutes
- leave to cool and keep in a biscuit
tin in a cool place.
- Delicious.
