Carrot Stars

 

A very special  Christmas treat. 
Bake well in advance to improve it's flavour, as it will keep for a few weeks. Wrap in foil or store in an airtight container and keep in a cool place.

50g (2oz) finely grated carrot
100g plain flour, sifted
120g (5oz) ground Almonds
75g ( 3oz) powder sugar, sifted
25g ( 1oz) cold unsalted butter cut into cubes
1 tbsp freshly grated orange peel (organic)
1 egg yolk
pinch of salt

  1. rub the butter into the flour, sugar, salt and ground Almonds
  2. add the egg yolk, grated orange peel and grated carrots
  3. knead well in and wrap into cling film
  4. place into refrigerator  for 1 hour
  5. roll out and cut star shapes and place on a greased baking tray
  6. bake in a preheated oven at 200C ( 400F/Gas6 ) for 10-12 minutes
  7. leave to cool and keep in a biscuit tin in a cool place.
  8. Delicious.
