Carrot Cake

 

Carrot Cake:
2 cups of plain flour
2 teaspoons of baking powder
2 teaspoons of baking soda
3 - 4  eggs
1/3 of a cup of olive oil
pinch of salt
1 - 2 cups of sugar
1/2 teaspoon of Vanilla extract
2 teaspoons of cinnamon
1/2 cup of chopped walnuts
4 cups of grated carrots 
Icing:
8oz of cream cheese
2 oz of soft unsalted butter
3/4 cup of powder sugar

  1. Preheat oven at 350F ( 175C )

  2. Whisk the eggs and sugar together

  3. mix in  the oil

  4. slowly add the sifted flour with the baking powder, baking soda, cinnamon and a pinch of salt

  5. stir in the carrots and walnuts

  6. bake for 45 minutes or until a toothpick inserted comes out clean

For the Icing:
combine the cream cheese, butter and sugar together and whisk until smooth
spread it over the cake and leave to set
