Sponge fingers
Medium Dry Sherry
1
pound of Summer fruit, fresh or frozen ( Strawberries, Currants, Raspberries,
Brambles, Cherries etc....)
2 heaped tsp of Arrow Root
100ml water
2 tbsp of sugar to taste
Arrow root
1/2 Jar of Strawberry Jam
A few fresh
Strawberries, Blueberries, Raspberries......
Custard
Double cream whipped
Roasted Almond Flakes
Grated dark Chocolate
-
simmer the fruit in the water and
sugar for a few minutes
until soft
- mix the arrow root with some cold
water
-
add to the fruit, mix well in and
bring back to boil
-
turn off heat keeping stirring for a
while
-
leave to cool
-
line the bottom of glass dish with the sponge finger
-
soak them with Sherry
-
gently heat the Strawberry Jam with 1 tbsp of water
- pour through a sieve over the sponge
cake
-
pour over the Custard and leave to set
- add the fresh Summer fruit
-
put the fruit mixture on top and leave to set
-
cover with the whipped cream
-
sprinkle over some roasted Almond flakes or Strawberries and grated Chocolate
