A very tasty salad from France. Makes a nice Lunch or First Course. Ideal for
Summer Parties, easy to prepare.
1 lb [ 450 g ] new potatoes
1 lb [ 450g ] French beans
2-3 tomatoes
mixture of a few salad leaves
4-5 spring onions
hard boiled eggs, 1 per person, halved
tin of chunks of tuna
4-5 anchovies
1clove of garlic
10 black olives
Dressing: mix 2 to 1 olive oil and wine vinegar,
salt and pepper to taste
- Boil the potatoes in their skins, drain and let cool,
cut into quarters
- top and tail beans and boil for 10 minutes, drain and put into cold water
and drain again
- rub the salad bowl with garlic, place the potatoes into the bowl and
add spring onions, halve of the dressing and mix well,
- leave to stand a few minutes for the potatoes to absorb the dressing
- then mix in some lettuce, beans, olives, anchovies
- add the chunks of tuna, tomatoes and egg halves
pour over the last of the dressing and serve
