Orange and Almond Cake
  A delicious moist, easy to prepare cake, which will also make a nice desert served with a coulis. Will keep for a week, kept in cake tin and cool place.

6 medium eggs
2 medium sized oranges, organic, important
300g ( 11oz ) ground Almonds
200g ( 7oz ) caster sugar
1 teaspoon baking powder

  1. wash the peel of the whole oranges and place into enough boiling water to cover them
  2. in a pressure cooker it will take about 10- 15 minutes
    in a saucepan it will take about 1 hour to 1 1/2 hours
  3. when ready cut them in quarters and remove the pips 
  4. then chop them into a fine pulp in a food processor 
  5. mix the ground almonds, sugar and baking powder
  6. add the eggs and mix well in
  7. now stir in the orange mixture
  8. pour into a greased, greaseproof paper lined, round loose bottom baking tin
  9. bake for 25 to 30 minutes in a hot oven ( 190C/375F Gas 5 )
  10. it is ready, when golden brown and touched, it will feel nice and spongy.
