500 g ( 18oz ) minced ( ground
) beef
or 300 g beef and 200g minced pork
2 small rolls, soaked in water
1 large onion, finely grated
1-2 cloves of garlic, crushed or very finely chopped
1 tablespoon of mustard
1-2 fillets of anchovies, very finely chopped ( optional )
Salt and freshly ground pepper to taste
1 large egg
some flour
sunflower oil
some stock
-
squeeze the water out of the rolls
-
mix it with the meat, onion, garlic, mustard, egg and the anchovies all together
-
season with care, anchovies are very salty
-
form into an oval
- dust with flour
-
gently fry on all sides in the hot oil until brown
- drain off the fat

add a little stock, about 2-3cm ( 1inch )and cover with lid
-
leave to braise gently for 1 hour plus, basting with the stock from time to
time.
- season to taste and thicken the stock to make
gravy

Serve with new boiled potatoes and your favorite vegetables.
