For the Meat Balls you will
need:
500 gr. ( 18oz ) of minced Beef
1 Onion,
finely chopped
2 cloves of Garlic, crushed
1/2 tsp dried Thyme
1/2 cup chopped Parsley
1/2 cup
grated Parmesan Cheese
pinch of Ground Nutmeg
2 slices white Bread soaked in Milk
1 Egg, beaten
Salt and Pepper
2-3 tbsp Oil for frying
For the Tomato Sauce you will need:
1 large tin of Tomatoes
1 tbsp Tomato Puree
1 onion, chopped
1 clove crushed garlic
Thyme
1 Bay leaf
Salt and pepper to taste
1/2 pint of Stock or water
1 tbsp olive oil
Meat Balls:
-
sweat the
chopped onion in a little oil, then add the crushed Garlic, leave to
cool
-
squeeze the
bread dry and crush it up
-
mix the meat
with all the other ingredients together
-
season to
taste
-
last add the
onions and garlic
-
shape into 1
inch balls
-
gently fry
and brown on all sides, put aside
Tomato Sauce:
-
fry the onion in the oil
-
mix in the crushed garlic
-
add the Tomatoes, Puree,
thyme, bay leave and season to taste
-
simmer for 35 minutes
-
blend until smooth
-
mix in the stock
-
add the meat balls and
simmer for 25-30 minutes
-
serve with spaghetti or
your favorite Pasta and grated Parmesan, delicious
