Cranberry and Orange  Sauce
 

Ideal with your Roast Turkey for Thanksgiving, Christmas and Easter, or with Roast Chicken and Roast Pork.
This is not the mashed up kind of sauce. The cranberries are left whole. Can be prepared 2 days in advance.

16 oz ( 450 g ) fresh cranberries
8 oz ( 225 g ) caster sugar
grated rind of 2 oranges
juice of 2 oranges

  1. place all your ingredients into a heavy bottom pan 
  2. heat gently, stirring all the time until sugar has dissolved
  3. let it simmer gently
  4. when the first halve of the cranberries start to break up, turn off and leave standing in the pan to cool
  5. serve with your roast turkey, roast chicken or roast pork, absolutely delicious.
