Chilled Cucumber Soup
 

This refreshing easy to prepare soup is ideal on a hot summers day. Serves 4 people.

large cucumber, peeled, halved and seeds removed 
10floz ( 290ml ) soured cream
20floz ( 570ml ) low fat yogurt
chives
8 spring onions 
a few sprigs of fresh dill
juice of half a lemon
Salt and pepper

Grate or blend the cucumber
chop 4-5 spring onions very fine
chop some dill very fine
mix it all together by hand with the yogurt and soured cream
season to your taste
if the soup is to thick, add some milk
leave to chill for a few hours
just before serving decorate with some sprigs of dill, spring onions or chives
or ice cubes, optional

Tip: If you want to give the soup a Greek taste, use mint instead of dill.
